Look Around Lubbock: Crusty's cooks wood-fired pizza

Wood-fired brick ovens and pizza have been around since the dawn of civilization. 

Crusty's Pizza puts a modern twist on the ancient cooking method by hauling a portable oven all around town. 

Owner, Russell Schlegel, said he starts the process by stretching out the pizza dough.

After that, each pizza is made-to-order with the customer's choice of toppings.

Schlegel then slides the pizza into the brick oven, which ranges in temperature from 900 to 1200 degrees. 

He said it only takes about two-and-a-half to three minutes to cook, so he has to be a very attentive cook. 

Schlegel said every Thursday throughout the summer he's teaming up with McPherson's Cellars for Party on the Patio. 

From 7:00pm to 10:00pm guests can enjoy wine, music and Crusty's Pizza baked with a crispy crust, melty cheese and smoky flavor.
