Black Bean Burgers

15 oz can low-sodium black beans, drained
1 clove garlic, finely minced
1 jalapeno, seeded and finely minced
1/2 cup corn, fresh or frozen
2 teaspoons paprika
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon dried oregano leaves
1 egg
1/2 cup panko breadcrumbs
4 wheat buns, toasted
4 slices pepper jack cheese, optional
Avocado or other condiments, optional

Mash black beans with a fork. 
If you are using frozen corn, defrost before adding to beans.
Stir in jalapeno, garlic, corn and spices.
Add the egg to vegetables and mix thoroughly. 
Sprinkle in breadcrumbs and mix until incorporated. Do not over-mix, or the patties will be dense.
Form four patties, and place on a foil-lined baking sheet. 
Bake at 375* for 20 minutes, flipping half way through. 
If cheese is desired, cover the top of each patty with one slice of pepper jack cheese, and bake for another five minutes.
Serve on a wheat bun with avocado.
