Watermelon and Feta Salad
4 cups watermelon, cut into 1 or 2 inch cubes
1/4 cup feta cheese
1 Tablespoon mint, chopped
1 small shallot, thinly sliced (optional)
In a large bowl, toss together watermelon, mint and shallots. Sprinkle feta cheese over the top. Serve immediately, or cover and store in the refrigerator.
Put the watermelon on a plate by itself or over a bed of lettuce, and drizzle balsamic vinaigrette dressing over the top.
Balsamic Vinaigrette Dressing
2 Tablespoons balsamic vinegar
1 clove garlic
Pinch of salt and pepper
3 Tablespoons of olive oil
In a small bowl, stir together balsamic vinegar, garlic, salt and pepper.
Whisking continuously, slowly pour in the olive oil. Whisk until the oil is fully incorporated.
