Peach Crumble

3 tablespoons unsalted butter
1 1/2 cups store-bought oat granola
2 tablespoons all-purpose flour, divided
1 tablespoon sugar, plus 1/4 cup
3 lbs peaches (about 8 medium peaches), peeled, cored and cut into 1/2-inch pieces
1/2 teaspoon cinnamon
1 teaspoon vanilla
1 tablespoon fresh lemon juice

Melt the butter in a medium oven safe skillet over medium heat. Add the granola, 1 tablespoon of the flour and 1 tablespoon sugar and toss until the sugar is dissolved and the granola is well-coated. Transfer to a bowl; set aside.

Pour the peaches into the skillet. Toss with cinnamon, flour, vanilla, lemon juice and remaining 1/4 cup sugar.

Scatter the granola mixture evenly over the top and transfer the skillet to the oven. Bake at 350* until the crisp is bubbling and the peaches are tender, about 30 minutes. Serve warm with ice cream or whipped cream.
