Mojito Fruit Salad
8 cups fresh fruit, chopped (Watermelon, peaches, honey dew, cantaloupe, strawberries, kiwi, grapes, plums, pluots, cherries, blueberries, etc)
¾ cup granulated sugar
¼ cup water
½ cup lime juice
*2 teaspoons rum extract (optional if you want a rum taste) or substitute ¼ cup lime juice with ¼ cup rum
2 tablespoons of chopped mint plus a few extra few mint leaves for garnish
Combine fruit in bowl with fresh mint.
Combine sugar and water in a small saucepan over low heat and heat until sugar is dissolved. Let cool.
Stir in lime juice and rum flavoring.
Drizzle about half of the lime mixture over the chopped fruit and gently stir until combined.
Continue to adding lime mixture until fruit is lightly coated. You do not want the juice to puddle at the bottom of the bowl.
Top with whole mint leaves for garnish.
Chill for at least 15 minutes before serving to let natural juices in the fruit to come out.
Fresh Peach “Donuts”
4-5 fresh peaches
1 cup non-fat plain Greek yogurt
Toppings of your choice, such as:
Peel peaches if desired. Cut peaches cross-ways, so the pit is in the center. Scoop out a little extra of the center with a melon baller to make a circle. Freeze the peach rings for about 30 minutes to make it easier to dip in yogurt.
Line a 9x13 pan with wax paper. Dip frozen peach slices in yogurt. Place on wax paper; sprinkle with toppings. Return peaches to freezer until frozen, about 3 hours.
When ready to eat, remove from freezer and let sit out at room temperature for about 5-10 minutes.
