Mini Turkey Melts

Rolls, two per person
1 slice of cheese per sandwich
2 TB cranberry sauce
1/2 tsp. dijon or hot mustard

Mix mustard and cranberry sauce.
Cut rolls in half. Smear a little of the cranberry sauce mixture on the bottom of each roll. Then add 1/2 slice of cheese, some turkey and the other 1/2 of the slice of cheese. 
Cover with foil, and bake at 350* for 12-15 minutes, or until the cheese is melted. Uncover and cook 2 minutes to brown top. 

Mashed Potato Pancakes

1 cup mashed potatoes
1 egg
1 Tablespoon flour
1 TB chives, about 4
Frying oil

Combine potatoes, egg, 1/2 TB flour, chives, salt and pepper. 
Form into patties
Heat oil over medium-high heat. 
Cook 5-8 minutes per side, or until browned and crisp. 
Or you can cook them in a waffle iron. Turn the waffle iron on the highest setting, and cook until golden.
