2 cups flour
1 Tablespoon baking powder
1 Tablespoon pumpkin pie spice mix
1/4 teaspoon salt
1/4 cup brown sugar
4 Tablespoon butter, melted and cooled
2 eggs, separated
1 teaspoon vanilla
1 1/2 cups milk
Stir together flour, baking powder, spice mix and salt.
In a separate bowl, whisk together melted butter and brown sugar. Add egg yolks, vanilla and milk.
Add half of the wet mixture to the dry. Mix until incorporated. Stir in the rest of the wet ingredients.
Whip egg whites until stiff. Fold egg whites into the batter.
Spray a preheated waffle iron with non-stick spray.
Pour in batter, close and cook for about five minutes, or until done.
Serve with butter and maple syrup.
Spiced Pumpkin Latte (makes two drinks)
1 cup milk
1 Tablespoon canned pumpkin
1 Tablespoon sugar
1/2 Tablespoon vanilla
1 teaspoon pumpkin pie spice
1/2 cup strong coffee
Heat milk, canned pumpkin and sugar together in a small saucepan over medium heat until warm. Do not boil.
Remove from heat, and stir in vanilla and spice.
Fill coffee cup up half way, then fill the rest of the cup up with the hot milk.
Top with whipped cream and a pinch of pumpkin pie spice.
