Pork Tenderloin
1 tenderloin
1/4 cup apple cider vinegar
1/4 cup Olive Oil
4 cloves garlic, smashed
2 Tablespoons Dijon mustard
2 sprigs rosemary, chopped
1 Tablespoon Salt
1 Tablespoon Pepper
In large plastic freezer bag, mix together all ingredients, and let sit in refrigerator for at least 30 minutes.
Sear on each side in an oven-safe pan, about 3 minutes each side in one Tablespoon of oil.
Finish in 400* oven for 20 minutes, or until an internal temperature of 150* has been reached.
Roasted Sweet Potatoes
Two medium-sized sweet potatoes, peeled and cubed
4 Tablespoons butter, melted
1 teaspoon cinnamon
1 Tablespoon brown sugar
1/4 cup walnuts, chopped
Coat sweet potato pieces in butter, cinnamon, brown sugar and walnuts.
Bake in a 400* oven for 25-30 minutes, or until soft.
