Pear and Cranberry Crumble
1/3 cup dried cranberries
1/2 cup white wine
4 pears, peeled and sliced
1 tsp. Orange zest (about one orange)
2 Tablespoons fresh orange juice
1/4 cup sugar
2 Tablespoons flour
1/2 tsp. cinnamon
1/2 tsp. nutmeg
3/4 cup old fashioned oats
1/4 cup flour
2 Tablespoons brown sugar
4 Tablespoons butter, cold and cubed
Pinch of salt
Soak cranberries in white wine until the berries are plump and soft, about 30 minutes. Drain wine from the berries.
Peel pears, and slice into strips. Put pears and cranberries in a large mixing bowl.
Add orange zest and juice to fruit.
In a small bowl, mix 1/4 cup sugar, 2 tablespoons flour, cinnamon and nutmeg. Add to fruit, and toss well to coat.
Pour the pear mixture into a 9x9 inch baking dish.
Make the crust: Mix together oats, 3/4 cup flour, brown sugar and a pinch of salt. Add cubes of butter. Using your fingers, a fork or pastry cutter, work the butter into the dry ingredients until large crumbs form. Sprinkle over fruit.
Bake at 350* for 40-50 minutes, or until the fruit is bubbly and top is browned.
Serve warm with ice cream.
