French Pear Tart
Crust:
1/2 cups flour
3 Tablespoons sugar
1/2 teaspoons salt
2/3 cup butter, cold and cubed
1 egg, beaten
1 teaspoon vanilla
Sift together dry ingredients.
Mash butter into the dry mixture with fingertips until well mixed. Keep the palms of your hands out of the mixture, or the butter will melt.
Stir in egg and vanilla.
Roll dough out to 1/4" thick between two sheets of parchment paper.
Fit into tart pan, and pinch off excess dough.
Prick the bottom with a fork to prevent bubbling.
Bake at 425* for 18 minutes, or until brown.
Pear Filling:
3-4 pears, peeled and cut into 1/4" slices
1/2 Tablespoon ground cinnamon
1/4 cup white sugar
1/4 cup brown sugar
Toss pears in sugar and cinnamon. Either dump or arrange in a circular pattern in crust.
Bake at 375* for 8-10 minutes, or until pears are tender.
Top cooled tart with whipped cream.
Homemade Whipped Cream:
2 cups heavy cream
3 Tablespoons sugar
1 teaspoon vanilla
Whip cream, sugar and vanilla together until firm peaks form. Keep covered and chilled.
