Brie en Croute
1 sheet puff pastry
1/3 cup pecans or walnuts
1 TB butter
1/4 tsp cinnamon
1/4 cup brown sugar
1/2 cup cranberry sauce or raspberry (or apricot) jam
1 8 oz. Wheel of brie
1 egg, beaten
1 TB water
Melt butter in a small saucepan. Saute pecans in butter for about 5 minutes, or until they begin to brown. Remove from heat and stir in cinnamon and brown sugar.
Thaw pastry, and roll out.
Place cranberry sauce, nuts and brie in the middle of pastry sheet. Fold pastry to envelope brie.
Place seam-side down on a baking sheet. Beat together egg and water. Brush the puff pastry with egg and water mixture.
Bake 375* for 20-25 minutes or until crust browns.
Hot Caramel Apple Cider
8 cups worth of apple cider
1-2 cups worth of caramel vodka
1 Tbs cinnamon (or three cinnamon sticks)
2 tsp vanilla
1/4 cup brown sugar, plus more for rims
(optional: cinnamon sticks for garnish)
Mix all ingredients in a large pot.
Heat over med-low, stirring occasionally until the liquid just begins to steam. You can also do this in a crock pot.
Rim mugs with additional brown sugar.
Pour hot cider into rimmed mugs, serve with a cinnamon stick if desired.
