Leftover Turkey Pot Pie
2 cups mashed potatoes
1 cup turkey, shredded
1/2 cup green beans, cooked
1/2 cup carrots, cooked
1/2 cup frozen peas
1/2 cup gravy
2 cups stuffing
In a pie dish, pat down mashed potatoes in an even layer. Bake at 350* for 20 minutes, or until browned.
Layer turkey and vegetables in baked potato crust, and pour in gravy.
Top with stuffing, and bake at 350* for 30 minutes.
Salad with Cranberry Sauce Vinaigrette
1/2 cup cranberry sauce
1/2 orange, juiced
Salt and pepper, to taste
1/4 cup olive oil
Spinach
1/4 cup nuts, like slivered almonds or toasted pecans
Stir together cranberry sauce and orange juice with a pinch of salt and pepper.
Whisking constantly, slowly pour in olive oil until fully incorporated.
Toss vinaigrette with spinach and nuts.
