3 tomatoes
1/2 red onion
1 jalapeno, seeded
1 clove garlic
1 to 2 limes, juiced
1/4 cup cilantro
1/2 teaspoon salt

Cut tomatoes, red onion and jalapeno into large chunks. Place these in a large blender with garlic, and blend until chunky. 
Add in the cilantro, salt and the juice of one lime, and blend until smooth. 
If your salsa comes out too spicy, add more lime and salt. 


4 small avocados (or two large)
1 lime, juiced
2 Tablespoons finely chopped red onion 
1/2 jalapeno, finely chopped (use less if desired)
1/2 tomato, seeds and pulp removed, chopped
2 teaspoons cilantro
1/2 teaspoon salt
1/8 teaspoon black pepper

Mash avocados and lime juice with a fork. 
Stir in the rest of the ingredients. Cover with plastic wrap if storing in the refrigerator. 

Baked Corn Tortilla Chips

12 corn tortillas, quartered
Non-stick cooking spray
1 teaspoon chili powder

Place a wire cooling rack on a baking sheet, and arrange corn tortilla pieces. 
Spray tortillas with non-stick cooking spray, and sprinkle chili powder and salt over the top. 
Bake in a 350* oven for 15 minutes, or until chips are crisp.
