Cranberry Bread
1 cup fresh cranberries, washed
2 cups flour
1/2 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. baking soda
3/4 cup sugar
1 egg
2 1/2 Tb. butter, melted
Orange rind, zested
1/2 cup orange juice, I used fresh-squeezed
2 Tb. hot water
1/2 cup pecans, optional
Mix together dry ingredients. Add in liquid ingredients.
Leave cranberries whole, or chop them.
Stir in cranberries, orange rind and pecans.
Grease and flour loaf pan. Pour batter into pan and bake at 350* for 45 minutes, or until toothpick comes out clean.
