Spicy Chorizo Hash
2 Tablespoons butter
2 cups chopped yukon gold potatoes
1/2 yellow onion, chopped
1/4 teaspoon salt
Pinch of pepper
1 sleeve of chorizo, about 8 ounces
1/4 cup shredded cheese
2 to 6 eggs, cracked into individual dishes
Melt butter in large skillet over medium-high heat.
Add potatoes and onion. Season with salt and pepper.
Cover and cook for 5 minutes.
Add chorizo to skillet along side potatoes and onions. Cook for 10 to 15 minutes, or until the potatoes are cooked through.
Flatten ingredients in the pan, and turn heat to low.
Sprinkle shredded cheese over the top, and add each egg on top of the hash carefully, so as not to break the yolk.
Cover quickly and cook for 5 minutes. Eggs are done when they no longer jiggle.
Serve with tortillas, if desired.
