Graham Cracker Crust:
1 1/2 cups graham crumbs
1/2 cup butter, melted
2 Tablespoons sugar
To make crumbs: Grind one sleeve of graham crackers in a food processor on high until fine.
Mix crumbs with butter and sugar.
Line a 9X13 baking dish with foil, and press the graham crackers into a thin layer.
4 eight oz. packages of cream cheese, softened
1 1/4 cup + 2 Tablespoons sugar, divided
2 teaspoons vanilla , divided
2 cups sour cream, divided
Cream together cream cheese, 1 1/4 cups of sugar and 1 teaspoon of vanilla.
Mix in 1 cup of sour cream.
Add in the eggs, one at a time.
Pour filling on the crust.
Bake at 325* for 40 minutes or until center is firm.
Stir together 1 cup of sour cream, 2 Tablespoons sugar and 1 teaspoon vanilla. Spread over the top of the cheesecake, and continue cooking at 325* for 10 minutes.
Let cool completely, then refrigerate for at least four hours.
Easy Strawberry Sauce:
2 cups strawberries, chopped
1 cup water
Put strawberries and water in a small saucepan over medium heat. Cook for 10 to 15 minutes.
