1 1/2 cups sugar
1/2 cup water
1/3 teaspoon cream of tartar
4 egg whites
1 teaspoon vanilla
Bring sugar, water and cream of tartar to a boil in a small sauce pan. Cook until it reaches 266*.
While the ingredients in the sauce pan are cooking, white the egg whites until stiff, but not dry.
Once the syrup reaches 266*, pour it slowly into the egg whites, continuously beating.
Add in vanilla 1/2 teaspoon at a time.
2 9 inch cakes, any flavor, cooked
Coconut, if desired
Food dye, if desired
Candy for decorating, like colored malted milk balls, jelly beans and licorice
Leave one cake whole, and cut two football shapes out of the side of the other. You will have three pieces from the cake you cut: two ears and a bow tie.
Arrange cakes onto baking sheet to make form a bunny shape.
Cover with icing, and decorate.
Sprinkle coconut on the face and ears. Dye some coconut pink for the inside of the ears. Also dye some green to surround your bunny on the baking sheet.
Use malted milk balls for the eyes and nose, and licorice or gummy worms that have been cut in half for the whiskers.
Decorate his tie with jelly beans.
Place Easter eggs around the bunny on the green coconut for decoration.
