Buffalo Wing and Beer Dip
8 ounces cream cheese
1 cup sour cream
1 cup Amber or IPA beer
6 to 7 ounces blue cheese, reserve 2 Tablespoons for garnish
1/2 cup hot sauce, like Frank's Red Hot
2 cups cooked chicken, finely shredded
2 Tablespoon cornstarch
Green onions, for garnish
Chips and celery sticks for serving
Melt cream cheese and sour cream with beer in a medium-sized pot over medium heat.
Add blue cheese and hot sauce, and stir until cheese is melted.
Toss chicken and corn starch together, and add to the rest of the mix.
Reduce heat to low, and let reduce by half. This takes about 15 to 20 minutes.
This can be served warm, but for best results, refrigerate for at least an hour.
Garnish with left over blue cheese and green onions.
Serve with tortilla chips and celery sticks.
