Black-eyed Peas
2 Tablespoons oil
1 green bell pepper, chopped
1 large white onion, chopped
2 cloves garlic, minced
Salt and pepper, to taste
1 pound dry black-eyed peas, already soaked according to package instructions
4 to 6 cups chicken stock, or enough to cover beans
1 hamhock
Saute pepper, onion, garlic, salt and pepper in oil for five minutes.
Add in peas, stock and hamhock. Cover and let simmer for two and a half to three hours.
This can be prepared in a crock pot.
