Kat's Kitchen- Baked Chicken and Summer Squash

2 yellow squash, sliced 
2 zucchini, sliced
2 Tablespoons oil
2 teaspoons thyme
1 pound chicken, cut into thin strips
Salt and pepper
Parmesan cheese, if desired

Toss sliced squash with oil, thyme and salt and pepper. Spread into an even layer on the bottom of a 9x13 inch baking dish. 
Place chicken strips on top of the squash, and salt and pepper each side of the chicken pieces. 
Bake in a 375* oven for 20 to 30 minutes, or until chicken is done. 
In the last 10 minutes of cooking, top with Parmesan cheese, if desired.
