3 Tablespoons oil, plus more for chicken
1/2 cup honey
1 teaspoon lemon juice
1/2 teaspoon salt, plus more for chicken
1/2 teaspoon chili powder
Pinch of cayenne pepper, optional
4 chicken breasts, pounded into thin slices
1 pineapple peeled, cored and cut into thick rings
Whisk together honey, lemon juice, salt, chili powder, cayenne pepper, and 3 tablespoons of oil. Set aside.
Rub chicken breasts with some oil and sprinkle on salt.
Grill or pan fry over medium-high heat for about 5 to 6 minutes per side, or until chicken is cooked through.
Remove chicken and brush with glaze. Let cool for a few minutes.
Meanwhile, grill the pineapple until it is well marked on each side, about two minutes per side. You could brush the pinnaple with the honey glaze if desired.
Brush chicken with honey glaze again before serving.
