Dirty Rice and Red Beans

4-5 cups cooked rice
1 lb uncooked sausage, or ground beef
2-3 TB Cajun seasoning, recipe below
1 stalk celery, chopped
1/2 onion, chopped
1/2 green bell pepper, chopped
2 cloves garlic, minced
1/4 cup parsley, chopped

Heat some oil in a large skillet over medium heat. Add celery, onion, bell pepper, garlic and sausage. Break the sausage into small pieces, and cook until vegetables are tender and meat is cooked.
Stir in Cajun seasoning. Stir in rice and parsley, and cook until rice is warmed.


4 pieces bacon, cut into pieces
1/2 onion, chopped
1/2 green bell pepper, chopped
1 clove garlic, chopped
2 (16 oz.) can red kidney beans, drained
1 (16 oz.) can chopped tomatoes (do not drain)
1-2 tsp Cajun seasoning, recipe below

Heat one tablespoon of oil in a large skillet over low heat. Saute bacon with onion and bell pepper until the bacon is cooked and vegetables are tender.
Add in garlic, beans, chopped tomatoes and Cajun seasoning. Simmer uncovered for 20 minutes. Serve over rice.


1 1/2 tsp paprika
1 tsp chili powder
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
1/2-1 tsp cayenne
1/2 tsp black pepper
1/2 tsp dried oregano
1/2 tsp dried thyme

Mix all spices together. This will make about 4 tablespoons.
If you want to make more, double or triple the recipe, and keep in an air tight container in the pantry.
