Apple Dumplings in a Spiced Butter Sauce

Apple Dumplings

1/3 cup sugar
¼ tsp cinnamon
¼ tsp nutmeg
4 tsp butter for the inside of the apples (1 tsp for each apple)
1 package ready made pie crusts (one box has 2 crusts)
4 Medium sizes apples peeled and cored
Sauce (recipe below) 

Mix together sugar, cinnamon and nutmeg in a small bowl. Set aside for the inside of the apples. 
Cut a sliver off the bottom of the apples to make them sit flat.
Preheat the oven to 375 degrees.
Roll out pie crusts from the box with your fingers. Cut crusts in half. Carve off two corners to use for the leaves.
Peel and make 1 apple at a time. Apples turn brown very quickly if you peel them all at once, or you can dip the peeled apples in a small bowl of water with about 1 Tbsp. lemon juice in it. Be sure to dry off the apples before trying to cover them with the pie dough if you use the lemon water to prevent browning.
Place one apple in the middle of the pie crust, upside down.
Fill the center of the apple with the cinnamon sugar and a piece of butter.
Fold up the corners to surround the apple.
Using your hands, mold the dough around the apple gently, sealing the edges. Turn apple right side up.
The presentation side is on top: 
Use the cut off corner dough to make a leaf. You can use a tiny cookie cutter or free hand cut out a leaf.
Moisten the back of the leaf with water and press it onto the top of the dough covered apple.
Use a sharp knife to make the leaf veins.
Place each dumpling into an 8 inch by 8 inch square baking dish.
Pour enough of the sauce (recipe below) to fill the baking dish about ¾ full.  (You may not need all of the sauce, depending on what size or shape baking dish you use.) Bake at 375 degrees for 45 minutes until golden brown. You may need to place a 2 X 2 inch aluminum foil “hat” over the leaves about half way through baking to prevent the leaves from getting too brown. Allow to cool enough to eat. Serve with vanilla ice cream.


Spiced Butter Sauce

1 ½ cups sugar
2 cups water or apple juice
¼ tsp cinnamon
¼ tsp nutmeg
¼ cup butter

Bring sugar, water, and spices to a boil in a saucepan over medium heat.
Reduce heat to a simmer.
Simmer for 10 minutes. Remove from the heat and stir in the butter.
